The study suggests that allowing the chopped broccoli to sit for a period of time before cooking can enhance the development of beneficial compounds like sulforaphane. The researchers recommended a 90-minute wait time, but also noted that even 30 minutes could be beneficial for maximizing sulforaphane content.
